Ingredients
  • 2412″ Burrito tortillas
  • 5lbs Chicken thighs, diced
  • 4lbs Shredded mexican cheese
Seasoning
  • 2tsp salt
  • 1tsp black pepper
  • 3tsp cumin
  • 3tsp chili powder
  • 1tsp garlic powder
  • 1tsp onion powder
  • 12tsp taco seasoning mix
  • 0.5cups cholula sauce

Instructions
  1. In a large mixing bowl, coat diced chicken with seasoning and cholula sauce.
  2. Sous vide chicken thighs at 165F. (Or cook the chicken however you want)
  3. Place tortilla in large non-stick pan on low heat.
  4. Sprinkle cheese on half of the tortilla. (About 1/3 cup of cheese)
  5. Wait for some cheese to melt, then place chicken on top of cheese. (About 1/3 cup of chicken). Sprinkle a little extra cheese on top of chicken.
  6. Fold in half and let everything melt. Flip as needed.
Recipe Notes
  • NOTE: Recipe ingredients calculator seems bugged. True numbers are 24 wraps from ingredients: 24 tortillas, 5 lbs chicken thighs, and 4 lbs cheese.
  • If you want a simpler list of ingredients for seasoning, you can just use taco seasoning only and omit all the other spices.
  • Melted cheese acts as glue to hold the tortilla together. Keep chicken towards the center and cheese more towards the outside edges for a better seal.
