Chicken Quesadillas

Ingredients
- 24 12" Burrito tortillas
- 5 lbs Chicken thighs, diced
- 4 lbs Shredded mexican cheese
Seasoning
- 2 tsp salt
- 1 tsp black pepper
- 3 tsp cumin
- 3 tsp chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 12 tsp taco seasoning mix
- 0.5 cups cholula sauce
- 1 NOTE Ingredient list might be bugged. Read Notes below

Instructions
- In a large mixing bowl, coat diced chicken with seasoning and cholula sauce.
- Sous vide chicken thighs at 165F. (Or cook the chicken however you want)
- Place tortilla in large non-stick pan on low heat.
- Sprinkle cheese on half of the tortilla. (About 1/3 cup of cheese)
- Wait for some cheese to melt, then place chicken on top of cheese. (About 1/3 cup of chicken). Sprinkle a little extra cheese on top of chicken.
- Fold in half and let everything melt. Flip as needed.
Recipe Notes
- NOTE: Recipe ingredients calculator seems bugged. True numbers are 24 wraps from ingredients: 24 tortillas, 5 lbs chicken thighs, and 4 lbs cheese.
- If you want a simpler list of ingredients for seasoning, you can just use taco seasoning only and omit all the other spices.
- Melted cheese acts as glue to hold the tortilla together. Keep chicken towards the center and cheese more towards the outside edges for a better seal.
